Orchomenus “Tiropsomo” (Cheese bread)

Is there anyone born and raised in Orchomenus who hasn’t grown up with tiropsomo? Is there anyone who has visited our city and hasn’t tasted our local specialty? A tradition passed down from generation to generation, tiropsomo is associated with joyful events and gatherings of friends and family. Today, you can find it in local eateries and taverns. Since it’s not enough just to know about it — you must taste it — here’s the recipe for making this traditional and beloved pie of our region.
Ingredients for a large pan:
1 kg. all-purpose flour
2 teaspoon salt
2 tablespoon sunflower oil
1 tablespoon vinegar
Lukewarm water as needed
For the filling:
600 gr. Feta cheese
½ kg. butter
1 beaten egg for brushing
Execution:
Place the flour in a large bowl. Make a small hole in the middle of it and add the salt, the sunflower oil, the vinegar and mix well slowly adding the lukewarm water. Knead well until you have a smooth dough that does not stick to the sides of the bowl. Let the dough rest for about 2 hours. Divide the dough into 7 balls. Open each dough ball with your hands, like opening a pizza dough, and add some feta cheese and butter, fold it and turn it. Place each tiropsomo in the pan and brush with the beaten egg. Bake for about 1 hour in a preheated 250-degree oven.
